I like to share treats with my co-workers. When I asked them for ideas one response I received was white chocolate macadamia nut cookies. In my world this is not a typical cookie I would make for myself, but since it was a request by a fellow co-worker I, decided to try making some.
They were a hit, and from what I’ve heard you either like macadamia nuts or you don’t. (I happened to like them) If you fall into the category who does like macadamia nuts, I highly recommend the recipe on the back of the Ghirardelli Baking Chips, Classic White, 11-Ounce Bags (Pack of 6). No surprise that is the recipe I’ve adapted for this article.
Here is how I make white chocolate macadamia nut cookies.
First, gather the ingredients.
Add the following to a mixing bowl and mix until fluffy.
- 2 sticks unsalted butter
- 1 1/2 cups granulated sugar
- 1 cup packed light brown sugar
Add two eggs.
Add 1 1/2 teaspoon vanilla.
Combine the dry ingredients in another mixing bowl.
- 3 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
Add half the dry ingredients to the wet ingredients, and mix.
Add the rest of the dry ingredients along with 1 1/2 cups chopped macadamia nuts, mix.
Add 1 (11 oz) bag of white chocolate chips and continue to mix.
Decide what size cookies you want. I’m just including this picture to show off my new cookie scoops. I received these as a Christmas present so I though I’d show them off. By the way I decided to use the larger scoop for this article.

Your batter should look something like this.
Use your fancy cookie scoop or a spoon full of batter to your desired size cookie onto an ungreased non-stick cookie sheet.
Bake at 350 degrees for 10-13 minutes. Place on cooling rack.
Enjoy!!
