I’ve made this bread twice in the last week and followed your directions exactly as written. The first time I used the BAKE option on the oven, the second time I used the CONVECTION BAKE option. BOTH times the bread came out still doughy in the middle even after letting it rest in the loaf pan for 15 minutes after taking it out of the oven. I even added an extra 1/4 cup AP prior to putting it in the pan. Can you give me any advice if I attempt to make this recipe again?

Sorry, it didn’t turn out well for you both times. I us a conventional oven so I’m only able to speak to that scenario. I wrote town 50-55 minutes in the directions, but have had to leave it in the over for over an hour for some other breads that I bake.
The real way to find out if the bread is done is to stick a butter knife or wood skewer in the middle. If the stick comes out doughy then leave it in the oven for another 5 minutes and then check again. Keep doing his until the stick comes out WITHOUT dough on the stick. That is how you will know for sure the bread is done.
