I don’t recall when our family discovered these but they are delicious. My mother usually makes these every few years or so during the holiday’s.
We purchase our Kirkland Signature Supreme Whole Almonds 3 Lbs. from our local Costco.
Apparently they are also available on Amazon.
I like plain almonds on my oatmeal, but sweetening them up with cinnamon and sugar adds a nice flavor.
Here is how I make cinnamon roasted almonds.
First gather all the ingredients.
Combine the dry ingredients.
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Mix the dry ingredients until well combined.
Set aside the dry ingredients.
Combine the wet ingredients.
- 1 egg white
- 1 teaspoon cold water
Separate the yoke from the egg white.
Add 1 teaspoon cold water.
Whip until frothy.
Add the egg white water mixture to the 4 cups of almonds.
Mix the almonds until they are covered with the egg white mixture.
Now add the cinnamon sugar.
Mix the almonds until they are coated with the sugar cinnamon mixture.
Place the coated almonds on a parchment lined cookie sheet.
Roast for a half hour at 250 degrees. Stir and roast for another half hour.
The finished product.
There is that toddler bandit again. At least he likes them. I caught him trying to get my pumpkin bread not too long ago.
Let cool for 15 minutes and enjoy!
