Chow Mein Cookies are another family favorite. I wouldn’t call them cookies as much as they are candy. It’s mostly all chocolate and butterscotch with a hint of chow mein noodle crunch. After browsing my mother’s recipe collection, it appears we printed a copy of this recipe in 2012.
I don’t recall, when or how our family stumbled across this one, but I do remember my mother making them for several years. Maybe my sister’s have a better memory and will respond in the comment section below.
Since this is an easy no-bake recipe, I decided to make them with my son. It’s Columbus Day 2024, and the kids are out of school. So let’s dig in and get a batch of these delicious clusters in my belly OOO AAA.

La Choy Chow Mein Noodles, 5 Ounce (Amazon)
Butterscotch Artificially Flavored Morsels Baking Chips (Pack Of 2 Bags) 11 oz. (Amazon)
Amazon Brand – Happy Belly Cashew Halves & Pieces, Roasted & Salted, 16 ounce (Amazon)
Amazon Brand – Happy Belly Roasted and Salted Peanuts, 44 ounce (Pack of 1) (Amazon)
DIRECTIONS
Now that we have the supplies and ingredients, let’s get to making these.
Step 1 – Melt the Chips
Add the milk chocolate chips and the butterscotch chips to your non-stick pot. Use low heat, melt the chips. Once the chips have been completely melted remove the pot from the heat.
Step 2 – Add noodles & cashews
Add the chow mein noodles and cashews (substitutions are acceptable for this recipe, I’m anxious to try with peanuts or pecans).
Step 3 – Mix and coat
Step 4 – Form Clusters
Let the clusters cool completely before storing in boxes or containers.

Chocolate-Butterscotch Chow Mein Clusters
Equipment
- 1 saucepan
- 1 spoon
- 1 wax paper
- 1 storage container
Materials
- 2 cups chocolate chips (one 11.5oz bag)
- 2 cups butterscotch chips (one 11oz bag)
- 5 oz chow mein noodles (1 can)
- 1/2 cup cashews or peanuts
Instructions
- Melt the chocolate and butterscotch chips.
- Remove from heat.
- Add Chow Mein Noodles & Cashews.
- Mix and coat until everything is combined.
- Spoon onto wax paper in desired sizes.
- Let cool completely
- Eat, share or store them.
